Zesty Southwest Chicken






I have to be honest here...this is one of my FAVORITE things to eat because it combines a lemony zest with spicy tomatoes. It doesn't get much better than that, but my hubby hates lemon and hates tomatoes so I don't make this often. I will say, that he DOES like this dish, but it's not something he will request regularly, if ever.


I bake this dish, but I'm sure if you wanted to throw it in a crock pot of instant pot that it would be just as tasty. Chicken takes a long time to bake to reach the correct internal temperature so just make sure you have plenty of time to prep AND cook this meal. But I assure you, it'll be worth your time if you like these flavors as much as I do.


The only tip I have for this recipe is that the marinade calls for 1/2 cup of lemon juice and that made my lips pucker a bit. If you like that, then stick to the instructions on the packet. If not, I'd recommend doing 1/4 cup of lemon juice and 1/4 of oil, water, or butter (mmmmm BUTTER!!!).


Everything else is pretty straight forward as far as ingredients. This recipe is so easy with so few ingredients that it's just really simple to make.


You can also make it as spicy (or not spicy) as you want based on the level of "hot" you buy with the diced tomatoes and green chilies. If you like NO spice at all (what's wrong with you?!?) you could just buy a can of regular diced tomatoes. I like mine extra spicy so I got hot diced tomatoes and green chilies and then topped everything with salt and pepper before I put it in the oven. Yummmm.
