If you don't have much time when you get home to cook up a fresh dinner, crock pot meals are a life saver. I have clung to my crock pot in our busiest times and I'm always trying to find ways to cook EVERYTHING in it. I wanted a cheesy broccoli rice chicken casserole but didn't want to wait for it to cook in the oven once I got home. So instead, I put it in the crock pot and I'm so happy I did.
I think the *cooked* rice in the last step soaks up all those liquids produced from cooking the chicken, broth, and broccoli. The shredded cheese makes it all stick together. We added a little pepper (and cayenne - of course!) on top and enjoyed a fresh hot meal when we got home from work. I put my crock pot on high for 6 hours (since I did frozen chicken) and it was perfect. My hubby and I ate on this for a few days so I'm thinking it might serve 4-6 people - especially if you make rolls or a salad to go with it. Here's the recipe...
