Maybe you're an instant potter and that's fine but I keep it vintage with my crock pot. I'm sure you can translate these recipes and cook times to instant pot language but in either case, I'm sharing some crock pot recipes that we LOVE.
You might be reading this because you're looking for some bomb (bussin'?) fall recipes to kick start the new season of cooler temps, but honestly, we eat crock pot meals all year. It's just easier for me to throw on a crock pot, leave it, and then devour it when we are hungry. It's big enough for the two of us that we end up eating each meal for 2 or 3 days. We save money, time, and anxiety over cooking while hungry every week.
Here are 5 of my favorite meals we make regularly...I'm saving the absolute favorite for last :) but the rest are in no particular order.
CHIPOTLE LIME PORK - This pork loin recipe is great as tacos, in a rice bowl, or over nachos (probably my favorite because once cooked and then placed in the oven over nachos, the meat gets all crispy and yummy). We usually do all three methods just so we don't feel like we're eating the same thing over and over for 3 days.
A tried and true recipe that I think every meat eating human loves: POT ROAST:
JALAPENO POPPER SOUP - This next recipe is LIT. Like literally. So spicy. If you don't love spice, then I'd recommend de-seeding the jalapenos before throwing those puppies in. I'd also recommend subbing a can of diced tomatoes for the rotel because rotel can be considered spicy, too. We throw it all in because we're lit fam.
I'm not a huge fan of ground beef, but it's a good, easy meat to prepare and balances our meals. I try to find ways I can hide the hamburgerness and this is one of my favorite ways to do that: HAMBURGER SOUP. It tastes nothing like an actual hamburger but it has hamburger meat in it so...shoulder shrug. When browning the meat, I like to add a little salt, pepper, and garlic to give it a little extra flavor. What can I say...we like a lot of flavor.
ENCHILADA SOUP - This soup is always a HUGE hit everywhere I take it. I've even been asked to bring it to Thanksgiving just so they could have it again. This soup is flavor packed and never disappoints. And for some reason, we end up being able to stretch this soup longer than 3 days.
